Whole Lamb is $3.50 /lb. Live Weight plus processing.
We use several butchers in the area for your custom processing.
Processing costs range from $75.00 - $100.00 / lamb.
This charge is separate because you pay the butcher directly at
time of pickup, or if you want to add any additional services they provide, that's up to you!
Your lamb will be cut to your specifications, packaged and frozen.
NO WORRIES if you would like us to help/ suggest cuts we will be glad to help you with that.
Our lambs will weight between 90 -120 lbs. This is the Live Weight of the animal.
So for a 100 lb lamb you would pay us 100 lbs X $3.50 = $350.00
Processing fee paid to the processor, average price = $90.00
The dressing percentage is about 54%. So a lamb weighing 100 lbs will have a hanging carcass weight of 54 lbs. This is the amount the animal carcass will weight after it after removing the inedible parts like the hide, feet, head, and the innards.
From this hanging carcass, the butcher will process the carcass into the appropriate cuts, based on your "cut sheet". Your take home finished cuts or yield will be about 60-70% of the hanging carcass weight.
So for that same 100 lb live lamb that had a hanging carcass weight of 54 lbs you would be able to take home approximately 35 lb of wrapped product.
Therefore, a whole lamb, processed and ready for pickup will cost you approx. $440.00 or $12.57/pound.
The rule of thumb: You need approx. 1 cubic foot of storage space for each 30 lbs of meat. A standard milk crate is approx. 1 cubic foot. So, most likely the freezer above your refrigerator will do just fine.
